  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika (smoked if available)
  • 1/2 teaspoon dried oregano
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon tomato paste
  • 1/4 cup (60 ml) water or beef broth
  • 810 small corn or flour tortillas, toasted or warmed
  • Optional toppings: shredded lettuce, diced tomatoes, grated cheese (cheddar or Monterey Jack), sour cream or Greek yogurt, fresh cilantro, pickled jalapeños or hot sauce

Instructions

  1. Finely chop 1 small onion and mince 2 garlic cloves (about 5 minutes).
  2. Heat a large skillet over medium heat and add 1 teaspoon oil if using lean ground beef. Warm for 1-2 minutes.
  3. Add chopped onions and sauté until translucent, about 3-4 minutes.
  4. Stir in minced garlic and cook for 30 seconds until fragrant.
  5. Add 1 pound ground beef to the pan. Break it up with a spatula and cook until no longer pink, about 6-8 minutes. Drain excess fat if needed.
  6. Sprinkle in chili powder, cumin, paprika, oregano, salt, and black pepper. Stir well to coat evenly.
  7. Stir in tomato paste, then pour in water or beef broth. Mix well and reduce heat to low.
  8. Simmer gently for 5-7 minutes, stirring occasionally until sauce thickens and flavors meld.
  9. Warm taco shells or tortillas in a dry pan or microwave for 20-30 seconds until pliable.
  10. Spoon beef mixture into each shell and add desired toppings.

Notes

If beef seems dry, add a splash more broth or water. Adjust seasoning at the end with salt or a squeeze of fresh lime juice for brightness. Avoid overcrowding the pan to ensure proper browning. Fresh spices improve flavor. Leftovers store well in the fridge for up to 3 days and freeze for up to 2 months.
