  • Paprika: 1 teaspoon (2 grams), smoked paprika optional
  • Black pepper: 1/2 teaspoon (1 gram), freshly ground
  • Lemon juice: 1 tablespoon (15 ml), fresh squeezed (optional)

Instructions

  1. Prepare the brine by combining 4 cups (1 liter) cold water with 1/4 cup (60 grams) kosher salt and 2 tablespoons (25 grams) sugar in a large mixing bowl. Stir until dissolved.
