  • 2 medium Persian cucumbers, thinly sliced
  • 1/4 cup fresh mint leaves, roughly chopped

  • 2 tablespoons extra virgin olive oil
  • Juice of 1 lime (about 2 tablespoons)
  • 1/2 teaspoon sea salt
  • Freshly ground black pepper, to taste (optional)

Instructions

  1. Using a sharp knife, cut the watermelon into 1-inch cubes (about 4 cups). Remove any seeds if not seedless.
  2. Thinly slice 2 Persian cucumbers into 1/8-inch thick rounds.
  3. Roughly chop about 1/4 cup fresh mint leaves.
  4. In a large mixing bowl, gently toss watermelon cubes, cucumber slices, and chopped mint together.
  5. Drizzle 2 tablespoons of extra virgin olive oil and the fresh juice of 1 lime over the salad.
  6. Sprinkle 1/2 teaspoon sea salt and freshly ground black pepper to taste. Toss lightly to coat all ingredients evenly.
  7. Sprinkle 1/2 cup crumbled feta cheese over the top. Give a gentle final toss or leave feta on top for texture contrast.
  8. Let the salad sit for 5 minutes at room temperature to allow flavors to meld. Taste and adjust seasoning if needed.
  9. Optional: Refrigerate for 10 minutes before serving for extra chill but avoid over-chilling.

For a dairy-free version, substitute feta with crumbled tofu or omit cheese. Pat cucumbers dry after slicing to prevent watery salad. Toss gently to avoid crushing watermelon. Add salt gradually and taste as you go. Refrigerate briefly if desired but avoid over-chilling to preserve sweetness.
