  • 1 cup strawberries, hulled and halved (150 g)
  • 2 medium kiwis, peeled and sliced
  • 2 medium oranges, peeled and cut into chunks
  • 1 cup green grapes, halved (150 g)
  • 2 tbsp mint leaves, roughly chopped (optional)
  • 1 tbsp fresh ginger, finely grated
  • 3 tbsp honey
  • 2 tbsp fresh lemon juice
  • 2 tbsp extra virgin olive oil
  • A pinch of sea salt

Instructions

  1. Prepare the fruits (about 10 minutes): Wash all the fruits thoroughly under cold running water. Hull and halve the strawberries, peel and slice the kiwis, segment the oranges removing pith and seeds, halve the grapes, and gently pat dry with paper towels. Toss them all gently in your medium mixing bowl to combine.
  2. Grate the ginger (2 minutes): Using a microplane, finely grate 1 tablespoon of fresh ginger into your small bowl or jar. If you find ginger too fibrous, scrape out the fibrous bits with a spoon after grating to keep the dressing smooth.
  3. Add the liquid ingredients (1 minute): To the grated ginger, add 3 tablespoons of honey, 2 tablespoons of fresh lemon juice, and 2 tablespoons of extra virgin olive oil. Add a small pinch of sea salt to balance the flavors.
  4. Mix the dressing (1 minute): Seal the jar tightly or whisk vigorously in the bowl until the dressing is fully combined and slightly thickened. Taste and adjust—if you want it sweeter, add a touch more honey; for more zing, add a squeeze more lemon juice.
  5. Toss and serve (2 minutes): Pour the ginger honey dressing over the fruit salad and toss gently but thoroughly so every piece is coated. Sprinkle chopped fresh mint leaves on top if using. Serve immediately for best freshness and vibrant flavors.
