  • 6 large eggs, hard-boiled, peeled, and cooled
  • β…“ cup plain Greek yogurt
  • 2 teaspoons everything bagel seasoning
  • 1 teaspoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • Β½ teaspoon sea salt, adjust to taste
  • ΒΌ teaspoon freshly cracked black pepper
  • 1 tablespoon finely chopped chives (optional)

Instructions

  1. Place 6 large eggs in a medium saucepan and cover with cold water by about an inch. Bring to a rolling boil over medium-high heat, then cover the pot and remove from heat. Let the eggs sit for 12 minutes.
  2. Drain the hot water and transfer eggs to a bowl of ice water. Let them chill for at least 5 minutes to help with easier peeling. Once cooled, gently crack and peel the eggs under running water to remove shells cleanly.
  3. Slice eggs in half lengthwise and carefully scoop out yolks into a mixing bowl. Mash the yolks with a fork until crumbly but not powdery.
  4. Add β…“ cup Greek yogurt, 1 teaspoon Dijon mustard, 1 teaspoon apple cider vinegar, Β½ teaspoon sea salt, and ΒΌ teaspoon cracked black pepper to the mashed yolks. Stir until smooth and creamy. If the mixture feels too thick, add a tiny splash of water or more yogurt.
  5. Transfer the yolk mixture to a piping bag or spoon it into the egg white halves. Pipe or dollop the filling evenly.
  6. Generously top each deviled egg with everything bagel seasoning and a pinch of chopped chives for a fresh pop of color and flavor.
  7. Refrigerate the deviled eggs for at least 15 minutes before serving to let the flavors meld. Serve cold or at room temperature.

Notes

Peeling eggs under running water helps remove shells cleanly. If filling is too dry, add an extra teaspoon of Greek yogurt. Avoid overcooking eggs to prevent greenish yolk rings. Piping the filling creates a neater presentation but spooning works fine. Store leftovers in an airtight container in the refrigerator for up to 3 days. Add everything bagel seasoning just before serving to keep it crunchy.
