A comforting and spicy Nigerian pepper soup that soothes and warms, perfect for cold days and healing from colds. Made with traditional spices and choice of goat meat, chicken, or fish.

Ingredients

Scale
  • 2 pounds (900g) goat meat, chicken, or fish, cleaned and cut into chunks
  • 8 cups (1.9 liters) water
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 2 tablespoons Nigerian pepper soup spice mix (blend of calabash nutmeg, alligator pepper, and more)
  • 1 teaspoon crushed uziza seeds (optional)
  • 2 small Scotch bonnet peppers, chopped
  • 1 seasoning cube (Maggi or Knorr preferred)
  • Salt to taste
  • A handful fresh scent leaves or basil, chopped
  • Lemon wedges for serving

Instructions

  1. Rinse your chosen meat thoroughly under cold water, then pat dry with paper towels. Cut into bite-sized chunks (~1 to 1.5 inches).
  2. Place the meat in a large stockpot and add 8 cups (1.9 liters) of water. Bring to a boil over medium-high heat, about 10 minutes. Skim off any foam that rises to the top.
  3. Add chopped onions, minced garlic, and grated ginger. Stir gently and let simmer for 20 minutes.
  4. Add Nigerian pepper soup spice mix, crushed uziza seeds, chopped Scotch bonnet peppers, seasoning cube, and salt. Stir to combine.
  5. Reduce heat to low and simmer uncovered for another 15-20 minutes until meat is tender and broth is infused with spices.
  6. Taste and adjust salt or spice levels. Stir in freshly chopped scent leaves or basil and simmer for 2 more minutes.
  7. Ladle soup into bowls and serve hot with lemon wedges on the side.

Notes

Use fresh goat meat or fish for best flavor. Adjust Scotch bonnet peppers to control heat. Skim foam for clearer broth. Add fresh herbs at the end to preserve aroma. If meat is tough, simmer longer covered. Reduce liquid by simmering uncovered if soup is too thin.
