  • 2 large or 4 medium sweet potatoes, peeled and grated
  • 1 cup (200g) brown sugar (light preferred)
  • 1 cup (240ml) evaporated milk (or full-fat coconut milk for dairy-free)
  • 1 cup (125g) all-purpose flour (or gluten-free flour blend)
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 4 tablespoons (60g) butter, melted (or margarine/coconut oil for dairy-free)
  • 2 large eggs, room temperature
  • 2 tablespoons rum or orange juice (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking pan with butter or line it with parchment paper.
  2. Grate the sweet potatoes finely using a food processor or hand grater.
  3. In a large mixing bowl, whisk together the eggs and brown sugar until light and fluffy, about 2-3 minutes.
  4. Pour in the evaporated milk, melted butter, vanilla extract, and rum (if using). Whisk gently to combine.
  5. Add the grated sweet potatoes to the wet mixture and stir until fully incorporated.
  6. Sift the flour, cinnamon, nutmeg, and salt together into a separate bowl.
  7. Gradually add the dry ingredients to the wet mixture, folding gently with a spatula until just combined.
  8. Pour the batter into the prepared pan, smoothing the top with a spatula.
  9. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Rotate the pan halfway through baking if needed.
  10. Remove from oven and let cool in the pan for at least 20 minutes before slicing.

Notes

Use firm, bright orange sweet potatoes for best moisture and flavor. Avoid overmixing the batter to keep the cake tender. If cake browns too fast, cover loosely with foil. Let the cake cool before slicing to prevent crumbling. Optional rum or orange juice adds brightness. For dairy-free, substitute evaporated milk with coconut milk and butter with coconut oil or margarine. Gluten-free flour blend can replace all-purpose flour.
