  • 1 can (12 fl oz / 355 ml) evaporated milk
  • 4 large egg yolks, room temperature
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons white sugar
  • 4 large egg whites, room temperature
  • 3/4 cup (150 g) white sugar
  • 2 tablespoons port wine or sweet dessert wine (optional)

Instructions

  1. Prepare the Caramel Base (20 minutes): In a medium saucepan, combine the sweetened condensed milk, evaporated milk, and white sugar. Cook over medium heat, stirring constantly to avoid burning, until the mixture thickens and takes on a golden caramel color (about 15 minutes). Remove from heat.
  2. Temper the Egg Yolks (5 minutes): In a separate bowl, lightly beat the egg yolks. Slowly add a few spoonfuls of the hot caramel milk mixture into the yolks, whisking quickly to warm them up without cooking. Then, pour the yolk mixture back into the saucepan with the caramel. Return to low heat and stir for 2-3 minutes until the pudding thickens further. Remove from heat and stir in vanilla extract. Pour into serving glasses or ramekins. Let cool to room temperature.
  3. Make the Meringue (15 minutes): Using a clean bowl and mixer, beat the egg whites on medium speed until foamy. Gradually add the sugar, a tablespoon at a time, increasing speed to high. Whip until you get stiff, glossy peaks (about 8-10 minutes). Gently fold in the port wine with a spatula.
  4. Assemble & Serve: Spoon or pipe the meringue over the caramel pudding base. For a classic touch, sprinkle a little ground cinnamon on top. Chill in the fridge for at least 30 minutes before serving to let the flavors meld and the meringue set slightly.

Notes

Cook the caramel base on medium to low heat to avoid burning. Use room temperature eggs for best results. Ensure mixing bowls and utensils are grease-free for perfect meringue. Port wine is optional and can be substituted with brandy, sherry, or omitted with vanilla or cinnamon added instead. Chill dessert for at least 30 minutes before serving.
