  • 3/4 cup (150 grams) granulated sugar

  • 2 butterfly pea flower tea bags
  • 1 cup (240 ml) coconut milk
  • 1 tablespoon lime juice (optional)
  • Edible glitter or silver sprinkles (optional)

Instructions

  1. Bloom the gelatin: Sprinkle 12 grams (4 teaspoons) of gelatin powder over 1 cup (240 ml) of cold water in a small bowl. Let it sit for 5 minutes to soften.
  2. Prepare butterfly pea tea: In a saucepan, bring 1 1/2 cups (360 ml) of water to a gentle boil. Remove from heat, add 2 butterfly pea tea bags, and steep for 10 minutes until deep blue. Remove tea bags and set aside.
  3. Sweeten the tea: Stir in 1/4 cup (50 grams) sugar into the warm tea until dissolved. Add the bloomed gelatin and gently warm the mixture over low heat, stirring until the gelatin fully dissolves. Avoid boiling.
  4. Make matcha mixture: In a separate bowl, whisk 2 tablespoons matcha powder with 1/2 cup (120 ml) hot water until smooth. Add 1/2 cup (120 ml) coconut milk and 1/4 cup (50 grams) sugar, whisking until sugar dissolves completely.
  5. Combine gelatin with matcha: Pour the bloomed gelatin mixture into the matcha mixture and stir well to combine evenly.
  6. Layering and swirling: Pour a small amount of butterfly pea jelly into clear cups, about 1/3 full. Let it partially set in the fridge for 10-15 minutes until slightly firm but still tacky.
  7. Once the first layer is tacky, pour a layer of matcha jelly on top, about 1/3 cup (80 ml). Before it fully sets, use a toothpick to gently swirl the layers together, creating the galaxy effect. Repeat layering and swirling if desired for extra depth.
  8. Chill: Refrigerate the jelly cups for at least 2 hours, preferably longer, until fully set and firm to the touch.
  9. Garnish and serve: Just before serving, sprinkle edible glitter or silver sprinkles for a twinkling galaxy finish. Serve chilled with a small spoon.

Notes

Do not rush the setting process between layers to maintain distinct swirls. Use a toothpick to swirl gently to avoid blending colors. For vegan version, substitute gelatin with agar-agar powder (about 1 teaspoon) and adjust setting times accordingly. Prepare butterfly pea tea the night before to deepen flavors and save time.
