  • 1 cup (240ml) whole milk, warmed
  • 1/3 cup (75g) granulated sugar
  • 2 1/4 tsp (7g) active dry yeast
  • 4 tbsp (60g) unsalted butter, softened
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 tsp salt
  • 1 egg beaten with 1 tbsp water (egg wash)
  • Optional: poppy seeds or sesame seeds for topping

Instructions

  1. Activate the yeast: In a small bowl, combine warm milk (about 110°F / 43°C) with sugar and yeast. Stir gently and let sit for 5-10 minutes until foamy.
  2. Mix the dough: In a large bowl or stand mixer, whisk together flour and salt. Add softened butter, eggs, vanilla extract, and the foamy yeast mixture. Mix until the dough starts to come together, about 3-4 minutes on low speed or by hand.
  3. Knead the dough: Knead on a lightly floured surface for 8-10 minutes until smooth and elastic. The dough should be soft but not sticky. Adjust flour or milk as needed.
  4. First rise: Place the dough in a lightly greased bowl, cover with a towel or plastic wrap, and let it rise in a warm spot for 1 to 1.5 hours until doubled in size.
  5. Shape the loaf: Punch down the dough and divide it into three equal strands. Roll each into a 16-inch rope. Braid loosely, pinch ends to seal, and tuck under. Place seam-side down in a greased loaf pan or on a parchment-lined baking sheet.
  6. Second rise: Cover and let the braided dough rise for another 45-60 minutes until puffy but not over-proofed.
  7. Preheat the oven to 350°F (175°C) about 20 minutes before baking.
  8. Apply egg wash and add seeds: Brush the loaf with egg wash for a glossy finish. Sprinkle poppy or sesame seeds if desired.
  9. Bake for 30-35 minutes until golden brown and hollow-sounding when tapped. Tent with foil if crust browns too fast.
  10. Cool: Transfer the loaf to a wire rack and cool completely before slicing.

Notes

Use warm milk (not hot) to activate yeast properly. Keep butter softened but not melted. Don’t rush rising times to avoid dense or gummy bread. Braiding loosely helps keep the bread soft and airy. Cool loaf completely before slicing to prevent gummy texture. Egg wash enhances crust color and shine.
