  • 3/4 cup (255 g) honey (preferably dark, robust variety like buckwheat honey)
  • 1/2 cup (100 g) granulated sugar
  • 2 large eggs, room temperature
  • 1/2 cup (120 ml) sour cream
  • 1/2 cup (120 ml) brewed black tea, cooled
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line your cake pan with parchment paper.
  2. In a large bowl, whisk together all-purpose flour, baking soda, cinnamon, ginger, cloves, and salt. Set aside.
  3. Using an electric mixer or whisk, beat softened unsalted butter with granulated sugar until light and fluffy, about 3-4 minutes.
  4. Gradually pour in honey while mixing on low speed until combined.
  5. Beat in eggs one at a time, mixing well after each addition.
  6. Add the dry ingredient mixture in three parts, alternating with sour cream and cooled brewed black tea, starting and ending with dry ingredients. Mix gently to avoid overmixing.
  7. Stir in vanilla extract until just combined.
  8. Pour batter into prepared pan and smooth the top with a spatula.
  9. Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  10. Let the cake cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
  11. Slice and serve with tea or coffee. For best flavor, let the cake rest overnight wrapped tightly in plastic wrap.
