  • 2 cups (400g) granulated sugar
  • 1 cup (240ml) vegetable oil
  • 3 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 3 cups chopped apples (about 3 medium, Honeycrisp or Granny Smith)
  • 1 cup (120g) chopped pecans (optional)
  • 1/2 cup (113g) unsalted butter
  • 1 cup (200g) packed brown sugar
  • 1/4 cup (60ml) heavy cream
  • 1 teaspoon vanilla extract
  • a pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 10- or 12-cup Bundt pan thoroughly with butter and dust with flour.
  2. Peel and chop apples into small, even pieces (about 1/2-inch cubes). Set aside.
  3. In a large bowl, whisk together flour, sugar, baking soda, salt, cinnamon, and nutmeg until well combined.
  4. Make a well in the center and add oil, eggs, and vanilla. Stir until just combined (a few streaks of flour are fine).
  5. Fold in chopped apples and pecans gently until evenly distributed.
  6. Pour batter into prepared Bundt pan and spread evenly. Tap pan gently on counter to release air bubbles.
  7. Bake for 55-65 minutes, or until a toothpick inserted in center comes out clean or with a few moist crumbs. If browning too fast, tent with foil at 40 minutes.
  8. Let cake cool in pan for 15 minutes, then invert onto a cooling rack and cool completely.
  9. While cake cools, make caramel glaze: In a small saucepan over medium heat, melt butter. Add brown sugar and cream, stirring constantly until sugar dissolves and mixture bubbles. Let simmer for 2 minutes without stirring. Remove from heat, stir in vanilla and salt. Let cool for 5 minutes (it will thicken).
  10. Pour warm caramel glaze over cooled cake. Let set for 15 minutes before slicing.

Notes

For a gluten-free version, use a 1:1 gluten-free baking blend. For dairy-free caramel, use plant-based butter and coconut cream. The cake tastes even better the next day. Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
