  • 1 cup old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1 cup pecans, finely chopped
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, combine sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla extract. Toss to coat evenly and let sit for 5 minutes.
  3. In a separate medium bowl, combine rolled oats, flour, chopped pecans, granulated sugar, brown sugar, and salt.
  4. Cut the cold, cubed butter into the dry topping ingredients using a pastry cutter or fingers until the mixture resembles coarse crumbs with pea-sized clumps.
  5. Spread the seasoned apple mixture evenly into the prepared baking dish.
  6. Sprinkle the oat pecan streusel topping over the apples, covering the edges, and press down lightly.
  7. Bake for 35-45 minutes until the topping is golden brown and juices are bubbling vigorously.
  8. If the topping browns too quickly, tent with aluminum foil. Let cool for 10-15 minutes before serving.

For extra flavor, toast pecans in a dry skillet for 3 minutes before chopping. Ensure butter is cold for a crispy topping. If using frozen apples, thaw and drain thoroughly to prevent sogginess.
