  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour (spooned and leveled)

  • Optional: 1/2 cup chopped walnuts or pecans
  • Optional: 1 teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray, or line with parchment paper, leaving overhang on the long sides.
  2. Mash the bananas in a large bowl using a fork or potato masher until mostly smooth with a few small lumps.
  3. Add the melted butter to the bananas and stir until combined.
  4. Mix in the sugar and stir well until mostly dissolved.
  5. Add the egg and vanilla extract and stir until smooth and glossy.
  6. Sprinkle the baking soda and salt over the batter and mix thoroughly.
  7. Add the flour all at once and stir gently until just combined. Do not overmix. Fold in optional add-ins if using.
  8. Pour the batter into the prepared loaf pan and spread evenly. Tap the pan gently on the counter to release air bubbles.
  9. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. If top browns too quickly, tent with foil after 40 minutes.
  10. Cool in the pan for 10 minutes, then transfer to a cooling rack. Let cool completely before slicing.
