  • 1 pound (450g) smoked sausage, sliced into ½-inch rounds
  • 3 medium bell peppers (red, yellow, orange), sliced into strips
  • 1 medium red onion, sliced into thin wedges
  • 2 tablespoons (30ml) olive oil
  • 3 cloves garlic, minced
  • ½ teaspoon (3g) salt
  • ¼ teaspoon (1g) black pepper, freshly ground
  • ½ teaspoon (2g) smoked paprika
  • 8 ounces (225g) cheddar cheese, sliced or cubed
  • 8 ounces (225g) Pepper Jack cheese, sliced or cubed
  • 810 ounces (225-280g) crackers (mix of buttery and whole wheat)
  • ¼ cup (60ml) grainy mustard
  • 2 tablespoons (30ml) honey (optional)
  • ½ cup (120ml) pickles (cornichons or dill pickle slices)
  • 1 cup (150g) cherry tomatoes, halved
  • 2 tablespoons (8g) fresh parsley, chopped

Instructions

  1. Prep your ingredients: Slice smoked sausage into ½-inch rounds. Cut bell peppers into thin strips. Slice red onion into thin wedges. Mince garlic. Cube or slice cheeses. Halve cherry tomatoes. Set everything aside.
  2. Heat your pan: Place a large skillet over medium-high heat and add 1 tablespoon olive oil. Heat until shimmering but not smoking.
  3. Sear the sausage: Add sliced sausage to the hot pan in a single layer (work in batches if needed). Cook undisturbed for 3-4 minutes until deeply browned. Flip and cook for another 2-3 minutes. Transfer to a plate.
  4. Cook the peppers and onions: Add remaining 1 tablespoon olive oil to the same pan. Add bell peppers and red onion. Cook for 5-6 minutes, stirring occasionally, until softened and starting to char. Add minced garlic and smoked paprika, cook for 30 seconds until fragrant.
  5. Combine and finish: Return seared sausage to the pan. Toss together and cook for 1-2 minutes. Season with salt and black pepper to taste.
  6. Assemble the board: Transfer sausage and pepper mixture to a serving board. Arrange cheddar and Pepper Jack cheese around the edges. Add piles of crackers, pickles, and cherry tomatoes in empty spaces. Place small bowls of grainy mustard and honey on the board. Garnish with fresh parsley.
  7. Serve immediately: Best enjoyed warm, with guests building their own bites.

Notes

For best results, get the pan screaming hot before searing sausage to achieve crispy edges. Don’t overcrowd the pan—cook in batches if needed. Let cheese come to room temperature for better flavor. Toast crackers at 350°F for 3-4 minutes for extra crunch. Leftover sausage and peppers can be stored in the fridge for up to 3 days and reheated in the oven.
