This homemade habanero buffalo wing sauce is the result of a three-year quest to recreate a legendary sports bar sauce. It’s tangy, buttery, fruity, and has just the right amount of heat to make your eyes water but keep you coming back for more.

  • 1/2 cup (1 stick) unsalted butter
  • 23 fresh habanero peppers, finely minced
  • 1 cup Frank’s RedHot Original Cayenne Pepper Sauce
  • 2 tablespoons distilled white vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 tablespoon packed brown sugar
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste

Instructions

  1. Melt the butter in a small saucepan over medium-low heat. Swirl occasionally until fully melted.
  2. Add the finely minced habanero peppers and sauté for 2-3 minutes until fragrant.
  3. Pour in the Frank’s RedHot, distilled white vinegar, and Worcestershire sauce. Stir to combine and bring to a gentle simmer.
  4. Sprinkle in the garlic powder, smoked paprika, and packed brown sugar. Stir until the sugar dissolves completely. Taste and adjust seasoning if needed.
  5. Reduce heat to low and let the sauce simmer gently for 3-4 minutes, stirring occasionally, until it thickens slightly and coats the back of a spoon.
  6. Remove from heat. Season with salt and black pepper to taste. Stir one last time.
  7. Let the sauce cool in the pan for 5 minutes. Serve immediately over hot wings or store in an airtight container in the refrigerator.

Notes

Wear gloves when handling habaneros to avoid skin irritation. For a milder sauce, remove seeds and membranes from the peppers. The sauce can be made up to 2 days ahead and stored in the refrigerator; flavors meld and improve over time. If the sauce separates, whisk it back together. For a dairy-free version, use vegan butter or coconut oil.
