  • 1/4 cup (60 ml) olive oil, extra virgin preferred
  • 4 garlic cloves, minced
  • 2 tablespoons (30 ml) lemon juice
  • 1 tablespoon honey
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt (kosher or sea salt preferred)
  • 1/2 teaspoon black pepper, freshly ground
  • 1/4 teaspoon chili flakes (optional)

Instructions

  1. Prepare the marinade by whisking together olive oil, minced garlic, lemon juice, honey, smoked paprika, dried oregano, salt, black pepper, and optional chili flakes in a large mixing bowl.
  2. Add the chicken thighs or drumsticks to the marinade, turning to coat each piece evenly. Cover and refrigerate for at least 30 minutes or up to 2 hours.
  3. Preheat the grill to medium heat (about 350Β°F / 175Β°C). If using charcoal, wait until coals are covered in gray ash.
  4. Place chicken skin-side down on the grill and cook for about 6-7 minutes per side, flipping once. Use tongs to turn carefully. Check for an internal temperature of 165Β°F (74Β°C).
  5. Remove chicken from grill and let rest for 5 minutes before serving to lock in juices.

Notes

Do not press down on the chicken while grilling to keep juices inside. Clean and oil grill grates before cooking to prevent sticking. Marinate chicken for 30 minutes to 2 hours; longer marinating can make meat mushy. Use a meat thermometer to ensure chicken reaches 165Β°F (74Β°C) for safety.
