A simple, reliable, and budget-friendly recipe for juicy hamburger patties ideal for bulk cooking. These patties stay tender, flavorful, and are perfect for quick meals or gatherings.

Ingredients

Scale
  • 2 pounds ground beef (80/20 blend)
  • 1 medium yellow onion, finely chopped
  • 1 teaspoon garlic powder
  • 2 tablespoons Worcestershire sauce
  • 1 ½ teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • ½ cup breadcrumbs (panko or regular)
  • 1 large egg, beaten
  • ¼ cup milk
  • Optional: chopped fresh parsley
  • Optional: a pinch of smoked paprika

Instructions

  1. Finely chop the yellow onion and set aside. Measure out spices and liquids.
  2. In a small bowl, combine the beaten egg and milk.
  3. Place ground beef in a large mixing bowl. Add chopped onion, garlic powder, Worcestershire sauce, salt, pepper, and optional seasonings. Pour in the egg and milk mixture. Sprinkle breadcrumbs on top last.
  4. Gently fold everything together just until combined, avoiding overmixing.
  5. Divide mixture into 8 equal portions (about 4 ounces each). Form each into a round patty about ¾ inch thick. Make a shallow dimple in the center of each patty with your thumb.
  6. Heat a skillet over medium-high heat. Add a light coating of oil if pan isn’t non-stick. Cook patties 5-6 minutes on first side until crust forms, then flip and cook another 5-6 minutes until internal temperature reaches 160°F (71°C).
  7. Transfer cooked patties to a plate, loosely cover with foil, and let rest for 5 minutes to redistribute juices.
  8. For bulk cooking, freeze uncooked patties between parchment paper sheets in a single layer. Thaw overnight in fridge before cooking.

Notes

Do not overmix the meat to avoid tough patties. Use a meat thermometer to ensure patties reach 160°F (71°C). Avoid pressing patties while cooking to keep them juicy. For gluten-free, substitute breadcrumbs with almond flour or gluten-free breadcrumbs. For leaner meats, add extra moisture like milk or grated zucchini.
