Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving an overhang on two sides for easy bar removal.
  2. In a large bowl, combine rolled oats, almond flour, brown sugar, cinnamon, and salt. Stir gently to distribute evenly.
  3. Melt the butter and honey together in a microwave-safe bowl or small saucepan, stirring occasionally until smooth. Remove from heat and stir in vanilla extract.
  4. Pour the melted butter and honey mixture over the dry ingredients. Stir with a spatula or wooden spoon until everything is evenly coated and sticky. Add a teaspoon of honey or melted butter if mixture feels too dry.
  5. Fold in mini chocolate chips and chopped nuts (if using), stirring gently to distribute without melting the chips.
