Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Line a baking sheet with parchment paper or a silicone mat.
  2. Grate 1 ยฝ cups of zucchini using a box grater or food processor. Place grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible.
  3. In a large bowl, whisk together rolled oats, flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves until evenly combined.
  4. In a separate medium bowl, beat softened butter, brown sugar, and granulated sugar with an electric mixer on medium speed until light and fluffy, about 2-3 minutes.
  5. Beat in the egg and vanilla extract until fully incorporated, scraping down the bowl as needed.
  6. Stir the grated zucchini into the wet mixture until evenly distributed.
