Ingredients

Scale
  • 1 cup (227 g) unsalted butter, browned
  • 3/4 cup (150 g) granulated sugar
  • 3/4 cup (165 g) packed brown sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • 2 1/4 cups (280 g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt (reduce to 1/4 teaspoon if using salted butter)
  • 1 1/2 cups (270 g) semi-sweet or bittersweet chocolate chips or chunks
  • Flaky sea salt for sprinkling on top

Instructions

  1. Brown the butter: Place 1 cup (227 g) unsalted butter in a medium saucepan over medium heat. Stir frequently with a wooden spoon. After about 5-7 minutes, the butter will melt, foam, then start to brown and smell nutty. Watch closely to avoid burning. Once browned, transfer to a heat-safe bowl and let cool for 10-15 minutes until just warm.
  2. Mix sugars and eggs: In a large mixing bowl, combine 3/4 cup (150 g) granulated sugar and 3/4 cup (165 g) packed brown sugar. Pour in the warm browned butter, then add 2 large eggs and 1 teaspoon vanilla extract. Mix until smooth and creamy, about 2-3 minutes with a hand mixer or whisk vigorously by hand.
  3. Combine dry ingredients: In a separate bowl, whisk together 2 1/4 cups (280 g) all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt.
  4. Incorporate dry into wet: Gradually add the dry ingredients to the wet mixture, stirring gently with a spatula until just combined. Donโ€™t overmix; the dough should look slightly shaggy but hold together.
  5. Add chocolate chips: Fold in 1 1/2 cups (270 g) chocolate chips or chunks evenly. The dough should be thick and a little sticky.
  6. Chill the dough (optional but recommended): Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to help the flavors meld and prevent spreading during baking.
  7. Preheat oven: Set your oven to 350ยฐF (175ยฐC). Line baking sheets with parchment paper or silicone mats.
  8. Scoop cookies: Use a cookie scoop or tablespoon to portion dough balls about 1.5 inches in diameter. Place them 2 inches apart on the baking sheets.
  9. Bake: Bake for 10-12 minutes, or until edges are golden but centers still look soft. The cookies will firm up as they cool.
  10. Add finishing touch: Immediately after removing from the oven, sprinkle a pinch of flaky sea salt on each cookie while still warm.
  11. Cool: Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Chilling the dough is optional but recommended to prevent spreading and improve flavor. Use room temperature eggs for better incorporation. Watch the butter carefully when browning to avoid burning. Donโ€™t skip the flaky sea salt on topโ€”it balances sweetness and enhances flavor. Baking times may vary by oven; remove cookies when edges are golden but centers still look soft.
