Instructions

  1. Brown the butter: Melt 1/2 cup unsalted butter in a medium saucepan over medium heat, stirring frequently until golden and fragrant, about 5 minutes. Remove from heat and cool slightly.
  2. Prepare the zucchini: Grate 2 medium zucchinis to yield about 2 cups. Place in a clean towel or cheesecloth and squeeze out excess moisture.
  3. Mix dry ingredients: In a large bowl, whisk together 2 cups flour, 3/4 cup granulated sugar, 1/4 cup brown sugar, 1 teaspoon baking soda, 1 teaspoon baking powder, 1/2 teaspoon salt, and 2 teaspoons ground cinnamon.
  4. Combine wet ingredients: In another bowl, whisk 2 large eggs, 1 teaspoon vanilla extract, 1/4 cup Greek yogurt, and the cooled brown butter.
  5. Mix wet and dry: Pour wet mixture into dry ingredients and stir gently until just combined. Fold in grated zucchini evenly.
  6. Prepare streusel topping: In a small bowl, combine 1/3 cup brown sugar, 1/2 cup flour, 1 teaspoon cinnamon, and a pinch of salt if using. Cut in 1/4 cup cold cubed butter with a fork or pastry cutter until coarse crumbs form.
