Ingredients

Scale
  • 4 large eggs
  • 2 tablespoons milk or cream (whole or plant-based)
  • 1 tablespoon unsalted butter or olive oil
  • ½ cup diced onions (yellow or red)
  • 1 garlic clove, minced
  • Salt and freshly ground black pepper to taste
  • ¼ cup shredded cheese (cheddar, feta, or mozzarella; vegan cheese optional)
  • 1 tablespoon chopped fresh herbs (parsley, chives, or cilantro)
  • Leftover bread or rice for serving
  • Vegetables such as bell peppers, spinach, tomatoes, or frozen peas (optional)
  • Spices like smoked paprika, cumin, or chili flakes (optional)

Instructions

  1. Gather your ingredients and equipment. Crack 4 large eggs into a bowl. Add 2 tablespoons of milk or cream, a pinch of salt, and freshly ground black pepper. Whisk gently until uniform but not overly frothy.
  2. Prepare your vegetables. Dice ½ cup of onions and mince 1 garlic clove. Chop about ½ cup of other vegetables if using.
  3. Heat your pan over medium heat. Add 1 tablespoon of butter or oil. Once melted and shimmering, sauté onions and garlic for 2-3 minutes until softened and fragrant. Add other veggies and cook for another 2 minutes if using.
  4. Pour in the egg mixture. Let it sit for about 10 seconds, then gently stir with a spatula, pushing from edges toward the center. Eggs should form soft curds within 30 seconds.
  5. When eggs are halfway cooked but still slightly runny, sprinkle in ¼ cup shredded cheese and 1 tablespoon chopped fresh herbs. Fold gently to combine without overcooking.
  6. Remove from heat just before fully set. Eggs will continue cooking off the heat and remain moist and creamy.
  7. Serve immediately over toasted bread or mixed into leftover rice. Garnish with extra herbs or hot sauce if desired.

Notes

Cook eggs on medium-low heat to avoid rubbery texture. Remove from heat while still slightly runny as eggs continue cooking off the stove. Use fresh eggs for best texture and flavor. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days and reheated gently with a few drops of water to maintain moisture.
