  • 1/4 cup (60 ml) vegetable oil
  • 2 cups (400 grams) granulated sugar
  • 1/2 cup (110 grams) packed brown sugar
  • 4 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 1/4 cups (160 grams) all-purpose flour
  • 3/4 cup (75 grams) unsweetened cocoa powder, sifted
  • 1 teaspoon espresso powder (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup (120 grams) chopped walnuts or pecans, toasted (optional)

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Line a 9×13-inch pan with parchment paper, leaving an overhang on the sides.
  2. Melt the butter in a microwave-safe bowl or on the stovetop over low heat. Whisk in the vegetable oil until combined.
  3. In a large bowl, combine the granulated sugar and brown sugar. Pour in the butter-oil mixture and whisk until smooth.
  4. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
  5. In a separate bowl, sift together the flour, cocoa powder, espresso powder (if using), salt, and baking powder.
  6. Gradually fold the dry ingredients into the wet mixture using a spatula, mixing just until no streaks remain.
  7. Fold in the toasted nuts if using.
  8. Pour the batter evenly into the prepared pan and smooth the surface with a spatula.
  9. Bake for 30-35 minutes, checking at 30 minutes with a toothpick. It should come out with a few moist crumbs but no wet batter.
  10. Remove from oven and place on a cooling rack. Let cool completely in the pan before lifting out with parchment paper.
  11. Cut into squares (24 pieces recommended) and serve.

Notes

Use room temperature eggs for better incorporation. Toast nuts lightly for added flavor. Avoid overmixing after adding flour to keep brownies tender. Use an oven thermometer to ensure accurate baking temperature. Let brownies cool completely before cutting for clean slices. For fudgier brownies, reduce flour slightly or add an extra egg yolk. Espresso powder is optional but enhances chocolate flavor. If batter is too thick, add a tablespoon or two of milk to loosen it.
