Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC). Line a 12-cup muffin tin with paper liners or lightly grease each cup.
  2. In a large bowl, whisk together 2 cups all-purpose flour, 2 teaspoons baking powder, ยฝ teaspoon baking soda, 1 tablespoon ground cinnamon, and ยฝ teaspoon salt.
  3. In a separate bowl, combine ยพ cup flour, ยฝ cup packed light brown sugar, 1 teaspoon cinnamon, and a pinch of salt. Add 6 tablespoons cold, cubed unsalted butter and mix with a pastry cutter, fork, or fingers until mixture resembles coarse crumbs. Set aside.
  4. In another bowl, whisk together ยฝ cup melted butter, ยพ cup granulated sugar, 2 large eggs, 1 teaspoon vanilla extract, and ยฝ cup Greek yogurt until smooth and glossy.
  5. Pour the wet ingredients into the dry ingredients and gently fold together using a rubber spatula. Do not overmix; a few lumps are okay.
  6. Fold in the diced apples. If batter seems too thick, add a tablespoon of milk to loosen slightly.
