This Cozy Crockpot Lasagna Soup has all the familiar flavors of classic lasagna—rich tomato broth, seasoned Italian sausage, tender noodles, and glorious melted cheese—without the fuss. It’s the perfect comforting meal that comes together in about 30 minutes of active time.

  • 1 tablespoon olive oil
  • 1 pound Italian sausage (casings removed)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 (28-ounce) can crushed tomatoes
  • 1 (14-ounce) can diced tomatoes (undrained)
  • 4 cups low-sodium chicken broth
  • 1 tablespoon tomato paste
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 ounces lasagna noodles, broken into 2-inch pieces
  • Water for boiling noodles
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the Italian sausage (casings removed) and cook, breaking it up with a wooden spoon, until browned and cooked through, about 5-7 minutes.
  2. Add the diced onion and cook for 3-4 minutes until softened. Stir in the minced garlic, dried oregano, dried basil, and red pepper flakes (if using). Cook for 1 minute until fragrant.
  3. Using a slotted spoon, transfer the sausage mixture to a 6-quart slow cooker. Leave any excess fat in the pan.
  4. Pour in the crushed tomatoes, diced tomatoes (with their juices), and chicken broth. Add the tomato paste, salt, and black pepper. Stir everything together until well combined.
  5. Cover the slow cooker and cook on LOW for 4-5 hours or on HIGH for 2-3 hours.
  6. About 20 minutes before serving, bring a large pot of salted water to a boil. Add the broken lasagna noodles and cook according to package directions until al dente. Drain well and set aside.
  7. In a small mixing bowl, combine the ricotta cheese, shredded mozzarella, and grated Parmesan. Stir until well mixed. Set aside at room temperature.
  8. When the soup base is done, stir in the cooked noodles. Taste the broth and adjust seasoning if needed.
  9. Ladle the soup into bowls. Top each serving with a generous dollop of the cheese mixture. Sprinkle with fresh parsley and serve immediately.

Notes

Cook noodles separately and add at the end to prevent mushiness. Let cheese come to room temperature for better melting. The soup base can be made ahead and stored in the fridge for up to 4 days; add freshly cooked noodles when reheating. For freezing, freeze the base without noodles for up to 3 months.
