Instructions

  1. Prepare your ingredients: Wash and dice the potatoes into ½-inch cubes, chop the bacon, onion, and mince the garlic. Pat the potatoes dry with a kitchen towel.
  2. Cook the bacon: Heat your skillet over medium heat and add chopped bacon. Cook until crispy, about 5-7 minutes. Use a slotted spoon to remove bacon bits, leaving the rendered fat in the skillet.
  3. Sauté onions and garlic: Add the chopped onion to the bacon fat and stir until translucent and fragrant. Toss in minced garlic for the last 30 seconds, careful not to burn it.
  4. Cook potatoes: Add butter and olive oil to the skillet. Then add diced potatoes, seasoning with salt and pepper. Spread evenly and let cook undisturbed for about 5 minutes to develop a crust. Stir occasionally after, cooking until golden and tender, about 15 minutes total.
  5. Combine bacon and cheese: Sprinkle the crispy bacon back into the skillet, followed by shredded cheddar cheese. Let the cheese melt naturally.
  6. Add eggs and finish cooking: Create four small wells in the skillet and crack an egg into each. Reduce heat to low, cover the skillet with a lid, and cook until eggs reach desired doneness (around 6 minutes for runny yolks).
  7. Garnish and serve: Remove from heat, sprinkle chopped chives or parsley on top, and serve immediately.

Notes

Pat potatoes dry before cooking to ensure crispiness. Cook potatoes in batches if skillet is crowded to avoid steaming. Use medium heat to prevent burning. Cover skillet when cooking eggs to trap steam and cook gently. If potatoes are not tender after 15 minutes, cover skillet to steam. For dairy-free, substitute cheese with plant-based version and use olive oil instead of butter.
