  • 2 pounds ground beef (80/20)
  • 1 large yellow onion, diced (about 1 ½ cups)
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 packet (1 ounce) taco seasoning
  • 1 teaspoon smoked paprika
  • ½ teaspoon cumin (optional)
  • Salt and black pepper to taste
  • 4 cups low-sodium beef broth
  • 1 can (15 ounces) fire-roasted diced tomatoes, undrained
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) corn kernels, drained
  • 1 can (4 ounces) diced green chiles
  • Shredded cheddar cheese (for garnish)
  • Sour cream or Greek yogurt (for garnish)
  • Fresh cilantro, chopped (for garnish)
  • Crushed tortilla chips (for garnish)
  • Diced avocado (for garnish)

Instructions

  1. Heat the olive oil in a large pot over medium-high heat. Add the ground beef and cook, breaking it up, until nicely browned, about 6-8 minutes. Spoon out excess fat, leaving about 1 tablespoon in the pot.
  2. Reduce heat to medium. Add the diced onion and cook for 3-4 minutes until soft and translucent. Stir in the minced garlic and cook for 30 seconds until fragrant.
  3. Add the tomato paste, taco seasoning, smoked paprika, and cumin. Stir and cook for 1-2 minutes to bloom the spices.
  4. Pour in about ½ cup of the beef broth and scrape the bottom of the pot to deglaze. Let it bubble for a minute until slightly reduced.
  5. Add the remaining beef broth, fire-roasted tomatoes (with juices), black beans, kidney beans, corn, and diced green chiles. Stir to combine.
  6. Bring the soup to a boil, then reduce heat to low. Cover and simmer gently for 20-25 minutes, stirring occasionally.
  7. Taste and adjust seasoning with salt, pepper, or additional heat as desired. If too thick, add more broth; if too thin, simmer uncovered for 5 minutes.
  8. Ladle into bowls and serve with desired toppings: cheese, sour cream, cilantro, tortilla chips, avocado, and lime wedges.

Notes

For best flavor, don’t skip browning the meat and blooming the spices. Use fire-roasted tomatoes for extra smokiness. Let the soup rest for 10-15 minutes after cooking for deeper flavor. Store in the refrigerator for up to 5 days or freeze for up to 3 months.
