Ingredients

Scale
  • 6 cups apples, peeled and sliced (about 56 medium apples; Honeycrisp or Granny Smith recommended)
  • 1/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1/2 cup salted caramel sauce, divided
  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 cup chopped pecans (optional)
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup salted caramel sauce (for topping)
  • Flaky sea salt (for finishing)

Instructions

  1. Preheat your oven to 350°F (175°C). Place your baking dish on a baking sheet lined with parchment paper.
  2. Peel, core, and slice apples into 1/4-inch thick slices. Toss with lemon juice in a large bowl.
  3. Add granulated sugar, 2 tablespoons flour, cinnamon, and nutmeg to the apples. Toss to coat. Fold in 1/4 cup of the salted caramel sauce.
  4. In a medium bowl, combine rolled oats, 1/2 cup flour, brown sugar, chopped pecans, and salt. Cut in cold butter using a pastry cutter or fingertips until mixture resembles coarse crumbs with pea-sized butter pieces.
  5. Transfer apple filling to the prepared baking dish and spread evenly. Sprinkle oat streusel over the top without pressing down.
  6. Drizzle remaining 1/4 cup salted caramel sauce over the streusel.
  7. Bake for 35-40 minutes, until streusel is golden brown and filling is bubbling. Tent with foil if browning too quickly.
  8. Cool on a wire rack for at least 15 minutes. Sprinkle with flaky sea salt before serving.

Notes

Don’t skip the lemon juice—it balances sweetness and prevents browning. Keep butter cold for a crumbly streusel. Let the crisp rest for 15 minutes before serving to allow the filling to set. For best results, use a mix of apple varieties like Honeycrisp and Granny Smith.
