  • 1 pound lean ground beef (90/10)
  • 1 pound sweet Italian sausage (removed from casings)
  • 8 to 9 dry lasagna noodles (broken into pieces)
  • 24 ounces marinara sauce
  • 32 ounces low-sodium beef broth
  • 2 cloves garlic (minced)
  • 1 medium yellow onion (diced)
  • 1 tablespoon dried Italian seasoning
  • 15 ounces whole milk ricotta cheese
  • 2 cups shredded low-moisture mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg yolk (optional, for ricotta mixture)

Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef and Italian sausage, breaking it up with a wooden spoon. Cook until no pink remains (5-7 minutes). Drain excess grease, leaving about 1 tablespoon for flavor.
  2. Add diced onion to the skillet with the meat. Cook until translucent (about 2 minutes). Add minced garlic and cook for 30 seconds until fragrant. Remove from heat.
  3. Transfer the meat mixture into a 6-quart slow cooker insert. Pour in marinara sauce and beef broth. Stir in dried Italian seasoning.
  4. Break dry lasagna noodles into 2-inch pieces and drop them into the slow cooker. Stir gently to submerge noodles in the liquid.
  5. Cover and cook on Low for 4 to 6 hours, until noodles are tender.
  6. While soup cooks, mix ricotta cheese, half of the Parmesan, and half of the mozzarella in a small bowl. Whisk until smooth. Add egg yolk if desired.
  7. Once soup is done, stir in remaining mozzarella and Parmesan. Let residual heat melt the cheese.
  8. Ladle soup into bowls. Dollop a spoonful of the ricotta mixture on top of each serving. Garnish with fresh basil if desired.

Notes

Do not boil lasagna noodles beforehand; break them into pieces to prevent clumping. Ensure noodles are mostly covered by liquid to prevent drying out. For meal prep, store cheese separately and add fresh when reheating to maintain texture. If using no-boil noodles, add an extra cup of broth.
