  • 1/2 teaspoon salt
  • 1/2 cup (115g) unsalted butter, cold and cubed
  • 3 to 4 tablespoons ice water
  • 3 to 4 ripe pears (Bosc or Bartlett)
  • 1/3 cup (70g) packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger (optional)
  • 1 tablespoon all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon juice
  • 1 egg, beaten (for egg wash)
  • Coarse sugar or turbinado sugar (optional, for sprinkling on crust)

Instructions

  1. In a large bowl, combine 1 1/4 cups flour and 1/2 teaspoon salt. Add cold, cubed butter and cut into flour using a pastry cutter or two forks until mixture resembles coarse crumbs with pea-sized bits of butter remaining (3-5 minutes).
  2. Slowly add 3 tablespoons ice water, mixing gently with a fork. Add more water, one teaspoon at a time, until dough holds together when pressed. Form dough into a disk, wrap in plastic, and chill for at least 30 minutes.
  3. Peel, core, and thinly slice 3 to 4 pears. In a medium bowl, toss pears with 1/3 cup brown sugar, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, 1/4 teaspoon ground ginger (if using), 1 tablespoon flour, 1 teaspoon vanilla extract, and 1 tablespoon lemon juice. Mix gently to coat evenly.
  4. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  5. On a lightly floured surface, roll chilled dough into a 12-inch circle about 1/8 inch thick. Transfer dough to baking sheet.
  6. Arrange pear slices in center of dough, leaving a 2-inch border. Fold edges of dough over pears, pleating gently to create rustic crust. Brush dough edges with beaten egg and sprinkle with coarse sugar if desired.
  7. Bake galette for 35 to 40 minutes until crust is golden brown and pears are tender and bubbling. Tent with foil if edges brown too quickly.
  8. Let galette cool on baking sheet for about 15 minutes before slicing. Serve warm or at room temperature, optionally with vanilla ice cream or whipped cream.

Notes

Keep butter and water ice cold for a flaky crust. Slice pears evenly for uniform cooking. Use egg wash for a golden crust and sprinkle coarse sugar for crunch. Watch baking time closely and tent with foil if edges brown too fast. Let galette rest before slicing for cleaner cuts.
