Quick and easy turkey chili stuffed sweet potatoes ready in under 30 minutes. A healthy, comforting meal perfect for busy weeknights.

  • 4 medium sweet potatoes
  • 1 tablespoon olive oil (for rubbing the skins)
  • Salt and black pepper (to taste)
  • 1 pound ground turkey (93% lean)
  • 1 tablespoon olive oil (for sautรฉing)
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 can (15 oz) diced tomatoes, undrained (fire-roasted preferred)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (8 oz) tomato sauce
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ยฝ teaspoon dried oregano
  • ยฝ teaspoon salt (plus more to taste)
  • ยผ teaspoon black pepper
  • 1 tablespoon apple cider vinegar
  • Shredded cheddar cheese (optional topping)
  • Sour cream or Greek yogurt (optional topping)
  • Fresh cilantro, chopped (optional topping)
  • Sliced green onions (optional topping)
  • Diced avocado (optional topping)
  • Lime wedges (optional topping)

Instructions

  1. Wash and dry the sweet potatoes. Prick each one 4-5 times with a fork. Rub skins with olive oil and sprinkle with salt. Place on a microwave-safe plate and microwave on high for 5 minutes. Flip and microwave another 4-5 minutes until tender. Set aside to cool slightly.
  2. While potatoes cook, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add diced onion and cook 3-4 minutes until translucent. Add minced garlic and diced red bell pepper, cook 2 more minutes.
  3. Push vegetables to sides of skillet. Add ground turkey in the center. Cook undisturbed 2-3 minutes, then break into pieces and cook 4-5 minutes until no longer pink.
  4. Sprinkle chili powder, cumin, smoked paprika, oregano, salt, and pepper over turkey mixture. Stir and cook 1 minute until fragrant.
  5. Pour in diced tomatoes (with juices), tomato sauce, and drained black beans. Stir to combine. Bring to a simmer, then reduce heat to medium-low. Let bubble gently for 10-12 minutes, stirring occasionally.
  6. Stir in apple cider vinegar. Taste and adjust seasoning as needed.
  7. Slice each sweet potato open lengthwise without cutting all the way through. Fluff insides with a fork. Spoon turkey chili generously over each potato (about ยพ cup per potato).
  8. Top with shredded cheese, sour cream, cilantro, green onions, avocado, and lime wedges as desired. Serve immediately.

Notes

For extra-crispy potato skins, after microwaving, place potatoes on a baking sheet and broil 2-3 minutes. The chili can be made a day ahead for deeper flavor. Don’t skip pricking the sweet potatoes to avoid explosions in the microwave.
