  • 8 ounces cream cheese, softened
  • 1/2 to 3/4 cup buffalo sauce (e.g., Frank’s RedHot)
  • 1/2 cup full-fat mayonnaise
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup ranch dressing (for drizzle)
  • 23 stalks green onions, sliced
  • Optional: Crumbled blue cheese or cooked bacon

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Shred cooked chicken into bite-sized pieces (approx. 2 cups).
  3. In a large mixing bowl, mash softened cream cheese until smooth.
  4. Add buffalo sauce and mayonnaise to the cream cheese; stir vigorously until smooth and uniform.
  5. Fold in shredded chicken and half of the mozzarella and cheddar cheese.
  6. Spread mixture evenly into a 9×9 inch baking dish.
  7. Sprinkle remaining shredded cheese over the top.
  8. Bake for 20-25 minutes until cheese is melted, bubbly, and edges are golden brown.
  9. While baking, thin ranch dressing with a teaspoon of milk if necessary.
  10. Remove from oven and let cool for 5 minutes.
  11. Drizzle ranch dressing over the top in a zigzag pattern and garnish with green onions.
  12. Serve immediately with tortilla chips, celery sticks, or crusty bread.

Use room temperature cream cheese for best texture. For a gluten-free option, ensure buffalo sauce and ranch are certified gluten-free. Can be assembled ahead and refrigerated; add 5-10 minutes to baking time if cold. Do not freeze as dairy may separate.
