  • 8 oz cream cheese, softened (use block, not spreadable)
  • 1/2 cup ranch dressing (full-fat recommended)
  • 1/3 cup hot sauce (Frank’s RedHot preferred)
  • 2 cups cooked chicken, shredded (rotisserie chicken works great)
  • 1 cup shredded cheddar cheese (sharp cheddar recommended, shred from block)
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup crumbled blue cheese (optional)
  • 2 green onions, sliced (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Let cream cheese sit out to soften, or microwave for 10-15 seconds if needed.
  2. In a medium mixing bowl, beat the softened cream cheese with a hand mixer or sturdy spoon until smooth and fluffy (about 1 minute). Ensure no lumps remain.
  3. Add the ranch dressing and hot sauce to the cream cheese. Mix until fully combined. Taste and adjust heat if desired.
  4. Fold in the shredded chicken using a spatula, ensuring every piece is coated.
  5. Stir in 3/4 cup of the shredded cheddar cheese and all of the mozzarella. Reserve the remaining 1/4 cup cheddar for topping.
  6. Transfer the mixture to a 9-inch baking dish or small skillet. Spread evenly. Sprinkle reserved cheddar and crumbled blue cheese (if using) on top.
  7. Bake for 18-22 minutes, until bubbly around edges and lightly golden on top. For a browner top, broil for the last 2 minutes, watching closely.
  8. Let rest for 5 minutes before serving. Sprinkle sliced green onions on top just before serving.

Notes

For a smoother texture, soften cream cheese properly and shred cheese from a block. Avoid overbaking to prevent dryness. For slow cooker method, combine all ingredients (except green onions) and cook on low for 2 hours, stirring halfway. This dip tastes even better the next day as flavors meld.
