A quick and easy creamy buffalo chicken dip that combines shredded chicken, cream cheese, and buffalo sauce for a spicy, tangy, and crowd-pleasing game day snack.

Ingredients

Scale
  • 2 cups shredded cooked chicken (about 300 grams)
  • 8 ounces cream cheese, softened
  • 1/2 cup buffalo hot sauce (e.g., Frank’s RedHot)
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese (about 110 grams)
  • 1/2 cup blue cheese crumbles (optional, about 60 grams)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Soften the cream cheese by leaving it out at room temperature for 20-30 minutes or microwaving for 15 seconds.
  3. In a mixing bowl, combine the softened cream cheese, buffalo sauce, and ranch dressing. Blend until smooth and creamy using a hand mixer or sturdy spoon.
  4. Add the shredded chicken, shredded cheddar cheese, and blue cheese crumbles (if using). Stir gently until evenly incorporated.
  5. Season with garlic powder, onion powder, salt, and pepper. Adjust seasoning as needed.
  6. Transfer the mixture to a greased 8×8-inch baking dish or cast-iron skillet and smooth the top with a spatula.
  7. Bake for 20-25 minutes until bubbly and the cheese on top is melted and slightly golden.
  8. Remove from oven and let cool for about 5 minutes before serving.

Notes

Softening the cream cheese well is key to avoid lumps. Use good quality hot sauce like Frank’s RedHot for best flavor. Adjust spice level by adding more buffalo sauce if desired. For extra texture, sprinkle chopped green onions or extra cheddar on top before baking. Can be made ahead and refrigerated before baking. Leftovers can be frozen for up to 2 months.
