  • ¼ cup red onion, finely diced
  • 2 tablespoons fresh dill, chopped (optional)
  • 2 hard-boiled eggs, chopped (optional)
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil (optional, for roasting cauliflower)

Instructions

  1. Preheat oven to 425°F (220°C). Toss cauliflower florets with olive oil, salt, and pepper on a baking sheet. Roast for 20 minutes, turning halfway through, until edges are golden and tender but not mushy. Alternatively, steam or blanch cauliflower for 5-7 minutes without overcooking.
  2. Place eggs in a pot and cover with cold water. Bring to a boil, then remove from heat and cover. Let sit for 10-12 minutes, then transfer to ice water before peeling and chopping.
  3. In a large bowl, combine mayonnaise, sour cream, Dijon mustard, apple cider vinegar, salt, and pepper. Whisk until smooth and creamy.
  4. Finely dice celery and red onion, chop fresh dill, and set aside.
  5. Once cauliflower is roasted and cooled to room temperature, add it to the dressing bowl along with celery, red onion, dill, and chopped eggs. Gently fold everything together, keeping cauliflower intact and coated.
  6. Taste and adjust seasoning with more salt, pepper, or a splash of vinegar if needed.
  7. Refrigerate for at least 1 hour before serving to let flavors meld and texture firm up.
