Instructions

  1. Preheat your skillet over medium heat. Cook the bacon strips until crisp, about 5-7 minutes. Transfer to a paper towel-lined plate and set aside, leaving some bacon fat in the pan.
  2. Season the chicken breasts lightly with salt and pepper. Place them in the hot skillet and cook for 6-7 minutes on each side, or until golden brown and cooked through (internal temperature 165°F / 74°C). Remove the chicken and set aside.
  3. Reduce heat to low. Add the cream cheese directly into the skillet (frozen or softened). Stir gently as it begins to melt, about 2-3 minutes, until smooth and creamy.
  4. Sprinkle in the ranch seasoning mix and stir to combine. Slowly add about 1/4 cup (60 ml) of water or chicken broth to loosen the sauce if it feels too thick.
  5. Return the cooked chicken to the skillet and spoon some of the creamy sauce over each piece. Sprinkle the shredded cheddar cheese evenly on top, then scatter the chopped bacon over everything.
  6. Cover the pan with a lid and cook on low for 3-5 minutes, or until the cheese melts fully and bubbles up.
  7. Serve hot, spooning extra sauce over the chicken. Pair with steamed veggies or simple rice if desired.
