A comforting, creamy slow cooker soup that recreates the taste of ‘lazy enchiladas’ with tender chicken, black beans, corn, and a rich cheese-infused broth.

  • 1.5 pounds boneless, skinless chicken breasts
  • 2 cups red enchilada sauce
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup frozen corn kernels
  • 1 can (4 oz) diced green chiles
  • 1 cup low-sodium chicken broth
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon oregano
  • 8 ounces cream cheese, softened and cubed
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 tablespoon fresh lime juice
  • Fresh chopped cilantro for garnish
  • Salt and pepper to taste

Instructions

  1. Dice the onion and mince the garlic. Place them at the bottom of a 6-quart slow cooker.
  2. Place chicken breasts on top of the vegetables. Sprinkle cumin, chili powder, smoked paprika, and oregano evenly over the chicken.
  3. Pour enchilada sauce and chicken broth over the chicken. Add black beans and corn. Stir gently to combine.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until chicken reaches 165°F and shreds easily.
  5. Remove chicken from the pot and shred into bite-sized pieces using two forks or hands. Return shredded chicken to the slow cooker.
  6. Turn slow cooker to high. Add cubed cream cheese and stir occasionally until completely melted and incorporated (10-15 minutes).
  7. Stir in lime juice. Taste and adjust seasoning with salt and pepper as needed.
  8. Ladle into bowls and top with shredded mozzarella and cheddar cheese, and fresh cilantro. Serve immediately.

Notes

For a thicker consistency, mash some beans/corn or use a cornstarch slurry. If using rotisserie chicken, add it during the last hour of cooking. Ensure cream cheese is at room temperature to prevent lumps. This soup freezes well but dairy may separate upon thawing; reheat gently on stovetop.
