  • 2 large cans (approx. 2428 oz total) boneless, skinless chicken breasts or thighs, drained and rinsed
  • 1 can (4 oz) diced green chiles, undrained
  • 2 cans (15 oz each) cannellini beans or Great Northern beans, rinsed
  • 1 carton (32 oz) low-sodium chicken broth
  • 1 block (8 oz) full-fat cream cheese, cut into cubes
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Optional: Fresh lime juice, diced jalapeños, fresh cilantro

Instructions

  1. Drain and rinse the canned chicken thoroughly. If using raw chicken, cut into bite-sized chunks. Place chicken in the bottom of a 6-quart slow cooker.
  2. Add the rinsed white beans and the entire can of green chiles, including the liquid, to the slow cooker. Stir gently to combine.
  3. Pour in the chicken broth. Add cumin, garlic powder, onion powder, salt, and pepper. Stir well to distribute spices.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until chicken is tender.
  5. About 30 minutes before serving, add the cubed cream cheese. Stir frequently until completely melted and incorporated. Use an immersion blender briefly if needed for smoothness.
  6. Taste and adjust seasoning with more salt, pepper, or fresh lime juice. Serve hot.

Notes

For a thicker chili, mash some beans against the side of the pot before adding cream cheese. If using raw chicken, add an extra hour to cook time. For dairy-free, swap cream cheese for a dairy-free alternative. Ensure broth and chiles are certified gluten-free if necessary.
