Creamy Marry Me Chicken with Sun-Dried Tomatoes

  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680g), pounded to even thickness
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, finely minced
  • 1/3 cup chopped sun-dried tomatoes (about 50g), packed in oil
  • 1/4 teaspoon red pepper flakes
  • 1 cup chicken broth (240 ml), preferably low sodium
  • 1 cup heavy cream (240 ml)
  • 1/2 cup grated Parmesan cheese (about 50g)
  • A handful of fresh basil, roughly chopped
  • 1 teaspoon lemon juice

Instructions

  1. Place chicken breasts between two sheets of plastic wrap. Gently pound with a meat mallet or rolling pin until about 1/2 inch (1.3 cm) thick. Season both sides with salt and pepper. (5 minutes)
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 5-6 minutes per side until golden brown and cooked through (internal temp 165°F / 74°C). Remove from pan and set aside on a plate. (12 minutes)
  3. Reduce heat to medium. Add butter to the same pan. Once melted, add minced garlic and sauté for about 30 seconds until fragrant—don’t let it burn! (2 minutes)
  4. Stir in chopped sun-dried tomatoes and red pepper flakes. Cook for 1 minute, letting flavors meld. (1 minute)
  5. Pour in chicken broth, scraping up browned bits from the bottom with a wooden spoon. Let it simmer gently for 3-4 minutes until slightly reduced. (4 minutes)
  6. Lower heat to medium-low. Stir in heavy cream and grated Parmesan cheese. Allow the sauce to simmer, stirring occasionally, until thickened—about 5 minutes. (5 minutes)
  7. Stir in fresh basil and lemon juice. Taste and adjust salt and pepper if needed. (1 minute)
  8. Nestle the cooked chicken breasts back into the sauce. Spoon sauce over the top. Let everything warm through together for 2-3 minutes before serving. (3 minutes)

Notes

If the sauce breaks or looks oily, whisk in a small splash of cold water or broth off the heat to bring it back together. Add cream slowly over medium-low heat to prevent curdling. Pounding chicken to even thickness ensures even cooking. Avoid overcrowding the pan when searing chicken.
