A quick, no-cook breakfast recipe featuring rolled oats soaked in milk with creamy peanut butter and ripe bananas. This meal-prep friendly dish offers a pudding-like texture and sustained energy without the need for morning cooking.

Ingredients

Scale
  • 1 cup rolled oats (old-fashioned)
  • 3/4 cup milk of choice (dairy, almond, oat, or soy)
  • 2 tablespoons creamy peanut butter
  • 1 medium ripe banana
  • 1 tablespoon chia seeds
  • 1 teaspoon honey or maple syrup
  • 1/4 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Mash one ripe banana thoroughly in a small bowl until smooth with no large chunks.
  2. In a separate bowl or directly in the jar, combine the milk, peanut butter, honey, cinnamon, and salt. Whisk or stir until the peanut butter is fully dissolved and the mixture is smooth.
  3. Add the rolled oats and chia seeds to the wet mixture. Stir well to ensure all oats are coated.
  4. Divide the mixture evenly among 4-6 mason jars. Use a spoon to press the oats down slightly to remove air pockets.
  5. Slice the remaining half of the banana and place slices on top of the oats in each jar. Optionally, add a dollop of extra peanut butter for garnish.
  6. Seal the jars tightly with lids and refrigerate for at least 4 hours, but ideally overnight (8-12 hours).
  7. Remove from the fridge and stir before eating. If the mixture is too thick, add a splash of milk. Enjoy cold or let sit for 10 minutes to reach room temperature.

Notes

[‘Use old-fashioned rolled oats for the best texture; avoid quick oats as they can become mushy.’, ‘Ensure peanut butter is well-stirred before measuring if the oil has separated.’, ‘For meal prep, make all jars on Sunday; they last up to 5 days in the refrigerator.’, ‘If the oats are too hard in the morning, let them sit in the fridge for another hour.’, ‘If the mixture is too runny, add more oats or chia seeds next time.’, ‘Store jars in the back of the fridge where it is coldest to ensure consistent cooling.’]
