A creamy, spicy buffalo chicken dip made easy in the slow cooker, featuring tangy blue cheese and a velvety texture perfect for game day or parties.

Ingredients

Scale
  • 3 cups shredded rotisserie chicken or cooked chicken breast
  • 8 ounces cream cheese, softened
  • 3/4 cup buffalo sauce (e.g., Frank’s RedHot)
  • 1/2 cup blue cheese crumbles
  • 1/2 cup ranch dressing
  • 1/2 cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Freshly ground black pepper to taste
  • Optional garnish: chopped green onions or extra blue cheese crumbles

Instructions

  1. Shred about 3 cups (approximately 12 oz / 340 g) of cooked chicken using two forks or your hands. Set aside.
  2. In a large mixing bowl, combine 8 oz softened cream cheese with 1/2 cup ranch dressing and 1/2 cup sour cream. Blend until smooth and creamy, about 2-3 minutes.
  3. Stir in 3/4 cup buffalo sauce until fully incorporated.
  4. Add 1 teaspoon garlic powder, 1 teaspoon onion powder, and freshly ground black pepper to taste. Mix thoroughly.
  5. Fold in shredded chicken, 1 cup shredded sharp cheddar cheese, and 1/2 cup blue cheese crumbles. Stir gently to combine.
  6. Pour mixture into slow cooker insert and spread evenly. Cover with lid.
  7. Cook on low for 2 to 3 hours, stirring every 30-45 minutes to prevent sticking and ensure even heating.
  8. Before serving, sprinkle extra blue cheese crumbles and chopped green onions on top for garnish.
  9. Serve warm with sturdy chips or celery sticks.

Notes

If the dip is too thick, stir in a splash of milk or additional ranch dressing to loosen. Cook on low heat to avoid cheese separation. Stir occasionally to prevent sticking. For a dairy-free version, use vegan cream cheese and dairy-free ranch. Can also be baked in the oven at 350°F for 25-30 minutes until bubbly and golden.
