  • 4 bone-in or boneless pork chops, about 1-inch thick
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil or vegetable oil
  • 2 tablespoons butter
  • 1 medium yellow onion, thinly sliced
  • 3 cloves garlic, minced (or garlic powder as substitute)
  • 8 ounces cremini or white mushrooms, sliced
  • 2 tablespoons all-purpose flour (can substitute with gluten-free flour)
  • 2 cups chicken broth
  • ½ cup heavy cream (can substitute with half-and-half)
  • 1 teaspoon dried thyme
  • 1 teaspoon Worcestershire sauce (optional)
  • Fresh parsley, a handful chopped (for garnish)

Instructions

  1. Pat 4 pork chops dry with paper towels. Season both sides generously with salt and freshly ground black pepper. Let them rest for about 10 minutes.
  2. Heat a large skillet over medium-high heat and add 2 tablespoons olive or vegetable oil. Once shimmering, add the pork chops and sear for 3-4 minutes on each side until golden brown. Transfer chops to a plate and set aside.
  3. Reduce heat to medium and add 2 tablespoons butter to the same skillet. When melted, add sliced onion and cook for about 4 minutes until translucent and slightly caramelized.
  4. Add minced garlic and sliced mushrooms, cooking for another 5-6 minutes until mushrooms release moisture and start browning.
  5. Sprinkle 2 tablespoons all-purpose flour over the mushroom mixture. Stir constantly for 1-2 minutes to cook out the raw flour taste.
  6. Slowly pour in 2 cups chicken broth while stirring to avoid lumps. Add 1 teaspoon dried thyme and 1 teaspoon Worcestershire sauce if using. Bring to a simmer until gravy starts thickening.
  7. Nestle the seared pork chops back into the gravy. Reduce heat to low, cover, and let simmer gently for about 15 minutes.
  8. Remove the lid and stir in ½ cup heavy cream. Simmer uncovered for 3-5 minutes until gravy is silky and coats the back of a spoon. Adjust seasoning with salt and pepper if needed.
  9. Sprinkle chopped fresh parsley over the top before serving.

Notes

If gravy is too thick, add a splash of broth or cream to loosen. If too thin, simmer uncovered a few more minutes. Pat pork chops dry before searing for better crust. Use garlic powder if fresh garlic is unavailable. For dairy-free, swap butter with olive oil and heavy cream with coconut cream. For gluten-free, substitute flour with xanthan gum or arrowroot powder.
