A rich and creamy French toast casserole stuffed with cream cheese and fresh strawberries, perfect for an easy and impressive breakfast or brunch.

Ingredients

Scale
  • 1 loaf thick-cut brioche or challah bread, sliced (preferably a day old)
  • 8 ounces cream cheese, softened
  • 1 cup fresh strawberries, sliced
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup granulated sugar
  • 6 large eggs, room temperature
  • 2 cups whole milk
  • 1/4 cup heavy cream (optional)
  • 1/4 cup maple syrup or honey
  • 1/4 teaspoon salt
  • Powdered sugar, for dusting (optional)
  • Extra fresh strawberries (optional)
  • Maple syrup or whipped cream (optional)

Instructions

  1. Prepare the cream cheese filling by combining softened cream cheese, vanilla extract, cinnamon, and granulated sugar in a medium bowl. Blend until smooth and creamy.
  2. Slice the brioche loaf into about 1-inch thick slices, keeping them connected in a loaf shape. Spread about 1 tablespoon of the cream cheese mixture on one side of each slice, then sprinkle sliced strawberries on top. Sandwich the slices back together and place cut side up in a 9×13 inch baking dish.
  3. In a large bowl, whisk together eggs, whole milk, heavy cream, maple syrup, and salt until fully combined to make the custard soak.
  4. Pour the custard evenly over the stuffed loaf in the baking dish. Press down gently on the bread slices to help absorb the custard. Cover with plastic wrap and refrigerate for at least 30 minutes or up to overnight.
  5. Preheat oven to 350°F (175°C). Remove plastic wrap and bake uncovered for 45-55 minutes, until the top is golden brown and custard is set. Tent with foil if top browns too quickly.
  6. Let the casserole cool for 10 minutes before slicing. Dust with powdered sugar and garnish with extra strawberries or maple syrup if desired.

Notes

Use day-old brioche or challah bread for best texture. Let custard soak overnight for extra creaminess. If custard isn’t soaking evenly, slide a butter knife between slices to distribute. Tent with foil if top browns too fast. Can be adapted for gluten-free or dairy-free diets by substituting bread and dairy ingredients.
