  • 2 cups (480 ml) Greek yogurt (full-fat or 2%)
  • 2 tablespoons honey (or maple syrup for vegan option)
  • 1 teaspoon vanilla extract
  • 1 cup (150 grams) fresh mixed berries (strawberries, blueberries, raspberries, or blackberries)
  • 1/3 cup (45 grams) raw shelled pistachios, roughly chopped
  • 1 tablespoon chia seeds (optional)
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Line a 9×13 inch (23×33 cm) baking sheet with parchment paper.
  2. In a mixing bowl, combine Greek yogurt, honey, and vanilla extract. Stir gently until smooth and creamy.
  3. If using, fold in chia seeds and lemon zest.
  4. Pour the yogurt mixture onto the lined baking sheet and spread evenly to about 1/4-inch (6 mm) thickness.
  5. Scatter fresh mixed berries and chopped pistachios evenly over the yogurt. Press lightly to help them stick.
  6. Freeze the baking sheet for at least 4 hours or until fully set but not rock-hard.
  7. Once frozen, lift the parchment paper and break the bark into irregular pieces using your hands or a sharp knife.
  8. Serve immediately or store in an airtight container in the freezer for up to two weeks.

Notes

Use thick Greek yogurt for best creamy texture. Pat berries dry if very juicy to avoid soggy bark. Let bark sit at room temperature for 5 minutes before eating if too hard. Store pieces separated by parchment paper in an airtight container to prevent sticking.
