  • 1/4 teaspoon black pepper

  • 4 tablespoons unsalted butter, softened
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • 1/2 teaspoon lemon zest
  • Pinch of salt

Instructions

  1. Pat the pork chops completely dry with paper towels. Let them sit at room temperature for about 10 minutes.
  2. In a small bowl, combine garlic powder, onion powder, smoked paprika, dried thyme, salt, black pepper, and cayenne (if using).
  3. Brush both sides of each pork chop with olive oil. Sprinkle the seasoning mixture evenly over both sides, pressing it in with your fingers.
  4. Preheat your air fryer to 400°F for 3-5 minutes.
  5. Place the pork chops in a single layer in the air fryer basket, leaving space between each one. Cook for 8 minutes.
  6. Flip the pork chops using tongs and cook for another 4-6 minutes, until the internal temperature reaches 140-142°F (they will continue cooking to 145°F while resting).
  7. Transfer the cooked pork chops to a cutting board or plate and let them rest for 5 minutes, tented loosely with foil.
  8. While the chops rest, make the garlic herb butter: In a small bowl, combine softened butter, minced garlic, chopped parsley, chives, lemon zest, and a pinch of salt. Mash together with a fork until evenly distributed.
  9. Place a generous dollop of garlic herb butter on each hot pork chop. Let it melt for about 30 seconds before serving.

Don’t skip drying the pork chops—moisture prevents crisping. Use an instant-read thermometer to avoid overcooking; pull at 140-142°F. Let the butter soften properly for easy mixing. Make extra garlic herb butter to use on vegetables, rice, or bread. For boneless chops, start checking temperature at 8 minutes. Reheat leftovers in the air fryer at 350°F for 3-4 minutes.
