  • 1/4 cup soy sauce
  • 2 tbsp cornstarch (for beef coating)
  • 1 tbsp vegetable oil
  • 1 tsp black pepper
  • 2 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/2 cup water
  • 1 tbsp cornstarch (for sauce slurry)
  • 1 tbsp cold water (for sauce slurry)
  • 4 cups broccoli florets
  • 2 stalks green onions, sliced (for garnish)

Instructions

  1. Slice flank steak against the grain into thin strips. Place in a large bowl with soy sauce, vegetable oil, black pepper, and 2 tbsp cornstarch. Toss to coat evenly and let marinate.
  2. In a separate bowl, whisk together brown sugar, rice vinegar, minced garlic, grated ginger, and 1/2 cup water until sugar is dissolved.
  3. Transfer marinated beef to a 6-quart slow cooker. Pour sauce mixture over beef and stir gently to combine.
  4. Cover and cook on low for 4 hours (or high for 2-3 hours).
  5. Add broccoli florets on top of the beef. Do not stir. Cover and cook on high for an additional 30 minutes.
  6. Mix 1 tbsp cornstarch with 1 tbsp cold water to create a slurry. Stir into the slow cooker.
  7. Cover and cook on high for another 15-20 minutes until sauce is thickened and glossy.
  8. Turn off slow cooker. Garnish with sliced green onions and serve over steamed rice.

Notes

Slice beef against the grain for tenderness. Add broccoli in the last 30 minutes to prevent mushiness. Use a cornstarch slurry to thicken the sauce at the end. Do not freeze leftovers as broccoli becomes mushy upon thawing.
