  • 1/2 cup packed brown sugar

  • 1/2 cup unsalted butter, cold and cubed
  • 2 tablespoons fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and slice about 6 medium peaches into roughly 1/2-inch thick slices. Toss them into a large mixing bowl with 1/3 cup granulated sugar, 2 tablespoons fresh lemon juice, and 1 teaspoon vanilla extract. Stir gently to coat the slices evenly. Set aside to macerate for about 10 minutes.
  3. In a separate bowl, combine 1 cup rolled oats, 3/4 cup all-purpose flour, 1/2 cup packed brown sugar, 1 teaspoon ground cinnamon, and 1/4 teaspoon salt. Add 1/2 cup cold, cubed unsalted butter. Use a pastry cutter or your fingertips to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
  4. Transfer the peach mixture (including any juices) into your greased baking dish. Spread evenly.
  5. Sprinkle the oat topping evenly over the peaches, making sure to cover the entire surface.
  6. Place the dish in the preheated oven and bake for 40-45 minutes until the topping is deep golden brown and the peach juices bubble around the edges. If the topping browns too quickly, loosely cover with foil halfway through baking.
  7. Remove from the oven and let cool for at least 15 minutes to thicken the juices.
