A quick, 30-minute weeknight dinner featuring chicken thighs seared in a crispy parmesan-garlic crust, served with pan-seared green beans in a rich garlic butter sauce.

  • 1.5 pounds boneless, skinless chicken thighs
  • 1 cup grated parmesan cheese (from a block)
  • 1 tablespoon garlic powder
  • 1 pound green beans (fresh or frozen)
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 cloves fresh garlic, minced
  • Salt and pepper to taste
  • 1 lemon, for squeezing (optional)

Instructions

  1. Pat chicken thighs completely dry with paper towels and season both sides with salt and pepper.
  2. Mix grated parmesan cheese and garlic powder in a small bowl to create a dry rub.
  3. Press chicken thighs into the cheese mixture, coating both sides evenly with a thick layer.
  4. Heat olive oil in a large skillet over medium-high heat.
  5. Sear chicken thighs for 4-5 minutes on one side until golden brown, then flip and cook for another 3-4 minutes. Remove chicken to a plate.
  6. In the same pan, cook green beans for 5-6 minutes until tender but crisp. If using frozen beans, add a splash of water and cover for 2 minutes to steam, then uncover to crisp.
  7. Reduce heat to low. Add butter to the pan with green beans. Once melted, add minced fresh garlic and stir for 30 seconds until fragrant.
  8. Return chicken to the pan and spoon the garlic butter and green beans over the chicken.
  9. Squeeze fresh lemon juice over everything and serve immediately.

Notes

Ensure chicken is completely dry before seasoning to achieve crispiness. Do not overcrowd the pan when searing. Freeze the parmesan block for 15 minutes before grating to prevent clumping. Avoid microwaving leftovers as it makes the cheese rubbery; reheat in a skillet to maintain texture.
