  • ¾ cup (75 g) freshly grated Parmesan cheese (Parmigiano-Reggiano recommended)

  • ½ teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning (or mix of dried basil, oregano, and thyme)
  • ½ teaspoon salt
  • Black pepper to taste
  • Optional: pinch of red pepper flakes
  • Optional: fresh parsley for garnish

Instructions

  1. Preheat the oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper or a silicone baking mat.
  2. Slice the zucchinis into thin rounds about ¼-inch (6 mm) thick using a sharp knife or mandoline.
  3. In a large mixing bowl, toss the zucchini slices with olive oil, garlic powder, Italian seasoning, salt, and pepper until evenly coated.
  4. Add the freshly grated Parmesan cheese and gently toss again to coat without clumping.
  5. Arrange the slices in a single layer on the prepared baking sheet, ensuring they do not overlap.
  6. Bake for 15 minutes, then carefully flip each slice using tongs or a spatula.
  7. Continue baking for another 10-15 minutes until the edges are golden brown and crisp. Watch closely in the last 5 minutes to avoid burning.
  8. Transfer the crisps to a wire rack or paper towel-lined plate to cool and firm up before serving.

Notes

Use freshly grated Parmesan for best texture and crispiness. Avoid overcrowding the baking sheet to prevent soggy crisps. Flip crisps halfway through baking for even browning. Keep an eye on the crisps in the last 5 minutes to avoid burning. To keep batches warm, use a low oven at 200°F (95°C). Reheat leftovers in a toaster or conventional oven to maintain crispness; avoid microwaving.
